This past year, Gabriel has really taken a liking to kimchi and, along with Daddy and Xiao Yu, enjoys eating it.
One day he said, "Let's make kimchi". Elvin has a co-worker who makes kimchi at home, so he asked him for a recipe.
So here it goes!
First, he quartered the head of the napa cabbage.
Then chopped it into pieces. Then in goes the cup of salt along with the julienned carrots.
While the cabbage was soaking in the salt water bath, the recipe called for grating an onion. Notice that Gabe's eyes started tearing up.
Several cloves of garlic were pressed too.
After the cabbage was drained, then everything gets mixed together with a slurry made out of the Korean chili pepper flakes and other ingredients.
Here is the result.

And this got stuffed into a mason jar.
And left out on the counter for a day to ferment.
And even after only one day, it was already tasty!
